Ingredients:

  • 1.5 lb boneless, skinless chicken breast, cut into 1-inch cubes
  • 2 large bell peppers (red and yellow), cut into 1-inch chunks
  • 1 medium zucchini, sliced into thick rounds
  • 1 medium red onion, cut into wedges
  • 3 tbsp extra-virgin olive oil
  • 2 tbsp raw honey
  • 1/4 cup fresh lime juice
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp sea salt
  • 1/4 tsp cracked black pepper

Instructions:

  1. In a large bowl, whisk together the olive oil, honey, lime juice, garlic, and spices. Toss in the cubed chicken and vegetables, stirring until every piece is coated in the golden marinade. Let sit for 10-15 minutes.
  2. Thread the chicken and vegetables onto skewers, alternating colors. Leave a tiny gap between pieces to allow heat to circulate for charred edges.
  3. Preheat grill to medium-high heat. Place skewers on the grate and cook for 5–6 minutes per side until the chicken reaches an internal temperature of 165°F (74°C).
