Ingredients:

  • 1 lb lean ground beef (90/10)
  • 1 small yellow onion, finely diced (approx. 150g)
  • 2 tbsp taco seasoning
  • 1/2 cup chunky salsa
  • 15 oz black beans, rinsed and drained
  • 1 cup frozen or canned corn kernels
  • 11 small corn tortillas, halved
  • 2 cups shredded Mexican blend cheese
  • 1/4 cup water

Instructions:

  1. Preheat oven to 400°F (200°C). In a large skillet over medium-high heat, brown the ground beef and diced onion until meat is fully cooked and onions are translucent. Drain excess fat.
  2. Lower heat to medium and stir in taco seasoning, black beans, corn, salsa, and water. Simmer for 3-5 minutes until the liquid reduces slightly.
  3. Grease a 9x13 inch baking dish. Layer the bottom with half of the corn tortilla pieces. Spread half of the beef mixture over the tortillas and sprinkle with 1/2 cup of cheese.
  4. Repeat the layers with the remaining tortillas, the rest of the beef mixture, and the remaining cheese.
  5. Bake for 15-20 minutes until the cheese is melted and the edges are bubbling. Let stand for 5 minutes before serving.
