Ingredients:
- 1 lb lean ground beef (90/10)
- 1 small yellow onion, finely diced (approx. 150g)
- 2 tbsp taco seasoning
- 1/2 cup chunky salsa
- 15 oz black beans, rinsed and drained
- 1 cup frozen or canned corn kernels
- 11 small corn tortillas, halved
- 2 cups shredded Mexican blend cheese
- 1/4 cup water
Instructions:
- Preheat oven to 400°F (200°C). In a large skillet over medium-high heat, brown the ground beef and diced onion until meat is fully cooked and onions are translucent. Drain excess fat.
- Lower heat to medium and stir in taco seasoning, black beans, corn, salsa, and water. Simmer for 3-5 minutes until the liquid reduces slightly.
- Grease a 9x13 inch baking dish. Layer the bottom with half of the corn tortilla pieces. Spread half of the beef mixture over the tortillas and sprinkle with 1/2 cup of cheese.
- Repeat the layers with the remaining tortillas, the rest of the beef mixture, and the remaining cheese.
- Bake for 15-20 minutes until the cheese is melted and the edges are bubbling. Let stand for 5 minutes before serving.
