Ingredients:

  • 1/2 cup honey
  • 3 tbsp soy sauce
  • 2 tbsp apple cider vinegar
  • 3 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • 4 6 oz boneless skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp kosher salt
  • 2 medium zucchini, sliced lengthwise into 1/4 inch planks
  • 3 ears corn, husks removed
  • 2 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp salt

Instructions:

  1. In a small bowl, combine honey, soy sauce, vinegar, minced garlic, and smoked paprika. Stir until the honey is fully incorporated.
  2. Pat the chicken breasts dry with a paper towel. Rub both sides with olive oil and salt.
  3. Toss the zucchini planks and corn in olive oil, garlic powder, and salt.
  4. Preheat your grill to medium-high heat (about 400°F / 200°C).
  5. Place chicken breasts on the grill. Cook for 5–7 minutes per side until distinct grill marks appear and the texture is firm.
  6. While the chicken is on its second side, place the corn and zucchini on the grill.
  7. Grill zucchini for 3–4 minutes per side until tender with charred marks.
