Ingredients:
- 1/2 cup honey
- 3 tbsp soy sauce
- 2 tbsp apple cider vinegar
- 3 cloves garlic, minced
- 1 tsp smoked paprika
- 1/2 tsp black pepper
- 4 6 oz boneless skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp kosher salt
- 2 medium zucchini, sliced lengthwise into 1/4 inch planks
- 3 ears corn, husks removed
- 2 tbsp olive oil
- 1/2 tsp garlic powder
- 1/2 tsp salt
Instructions:
- In a small bowl, combine honey, soy sauce, vinegar, minced garlic, and smoked paprika. Stir until the honey is fully incorporated.
- Pat the chicken breasts dry with a paper towel. Rub both sides with olive oil and salt.
- Toss the zucchini planks and corn in olive oil, garlic powder, and salt.
- Preheat your grill to medium-high heat (about 400°F / 200°C).
- Place chicken breasts on the grill. Cook for 5–7 minutes per side until distinct grill marks appear and the texture is firm.
- While the chicken is on its second side, place the corn and zucchini on the grill.
- Grill zucchini for 3–4 minutes per side until tender with charred marks.
