Ingredients:
- 4 cups sliced peaches
- 1/2 cup granulated sugar
- 2 tbsp cornstarch
- 1 tbsp lemon juice
- 1/2 tsp ground cinnamon
- 2 tbsp melted unsalted butter
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 3/4 cup whole milk
- 1/2 cup melted unsalted butter
Instructions:
- Preheat the oven to 375°F (190°C).
- In a 9x9 inch baking dish, toss the sliced peaches with 1/2 cup sugar, cornstarch, lemon juice, and cinnamon.
- Pour 2 tbsp of melted butter over the peaches and stir gently until coated.
- In a medium bowl, whisk together flour, 1/2 cup sugar, baking powder, and salt.
- Stir in the milk until just combined; do not overmix.
- Pour 1/2 cup of melted butter into the baking dish, then spoon the batter over the butter, swirling slightly to meet the peaches.
- Bake for 40-45 minutes until the edges are bubbling and the topping is a deep mahogany-gold.
- Allow the cobbler to rest for 15 minutes before serving to allow the sauce to thicken.
