Ingredients:

  • 4 cups sliced peaches
  • 1/2 cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1/2 tsp ground cinnamon
  • 2 tbsp melted unsalted butter
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup whole milk
  • 1/2 cup melted unsalted butter

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a 9x9 inch baking dish, toss the sliced peaches with 1/2 cup sugar, cornstarch, lemon juice, and cinnamon.
  3. Pour 2 tbsp of melted butter over the peaches and stir gently until coated.
  4. In a medium bowl, whisk together flour, 1/2 cup sugar, baking powder, and salt.
  5. Stir in the milk until just combined; do not overmix.
  6. Pour 1/2 cup of melted butter into the baking dish, then spoon the batter over the butter, swirling slightly to meet the peaches.
  7. Bake for 40-45 minutes until the edges are bubbling and the topping is a deep mahogany-gold.
  8. Allow the cobbler to rest for 15 minutes before serving to allow the sauce to thicken.
