Ingredients:

  • 2.5 cups all-purpose flour (315g)
  • 1 tablespoon granulated sugar (12g)
  • 1 teaspoon fine sea salt (6g)
  • 1 cup unsalted butter, frozen (226g)
  • 7 tablespoons ice water (105ml)
  • 1 teaspoon apple cider vinegar (5ml)

Instructions:

  1. Grate the frozen butter sticks using the large holes of a box grater. Place the grated butter back in the freezer for 5 minutes.
  2. In a large mixing bowl, whisk together the all-purpose flour, sugar, and salt.
  3. Toss the frozen butter shavings into the flour mixture with a fork until every piece of butter is coated in flour.
  4. Mix the apple cider vinegar into the ice water. Drizzle the liquid over the flour mixture one tablespoon at a time, tossing with a spatula until the dough begins to clump into a shaggy mass.
  5. Turn the dough onto a clean surface and gently press into two even discs. Wrap each disc tightly in plastic wrap and flatten slightly.
  6. Chill the dough in the refrigerator for at least 1 hour before rolling out.
