Ingredients:

  • 1.5 lbs zucchini, sliced into 1/4-inch rounds or spears
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/4 cup freshly grated Parmesan cheese

Instructions:

  1. Preheat oven to 425°F (218°C) and line a large rimmed baking sheet with parchment paper.
  2. In a large mixing bowl, combine the zucchini slices with olive oil, salt, pepper, and garlic powder. Toss thoroughly until every slice is evenly coated.
  3. Spread the zucchini in a single layer on the prepared baking sheet, ensuring no pieces overlap to maintain airflow.
  4. Roast in the oven for 10 minutes.
  5. Remove the pan from the oven, sprinkle the Parmesan cheese evenly over the zucchini, and return to the oven for another 5–10 minutes until the edges are mahogany-colored and the cheese is bubbling and gold.
