Ingredients:
- 1.5 lbs zucchini, sliced into 1/4-inch rounds or spears
- 2 tbsp extra virgin olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp garlic powder
- 1/4 cup freshly grated Parmesan cheese
Instructions:
- Preheat oven to 425°F (218°C) and line a large rimmed baking sheet with parchment paper.
- In a large mixing bowl, combine the zucchini slices with olive oil, salt, pepper, and garlic powder. Toss thoroughly until every slice is evenly coated.
- Spread the zucchini in a single layer on the prepared baking sheet, ensuring no pieces overlap to maintain airflow.
- Roast in the oven for 10 minutes.
- Remove the pan from the oven, sprinkle the Parmesan cheese evenly over the zucchini, and return to the oven for another 5–10 minutes until the edges are mahogany-colored and the cheese is bubbling and gold.
