Ingredients:

  • 2 cups rolled oats
  • 1 cup creamy peanut butter (or almond butter)
  • ½ cup honey or maple syrup
  • ½ cup shredded coconut (unsweetened)
  • 1 teaspoon vanilla extract

  • ½ cup chocolate chips (optional)
  • ½ cup chopped nuts (optional)
  • Dried fruit to taste (optional)

Instructions:

  1. Combine rolled oats, peanut butter, honey, shredded coconut, vanilla extract, and cinnamon in a mixing bowl.
  2. Stir the mixture until all ingredients are well incorporated and a sticky dough forms.
  3. If using, fold in chocolate chips or any optional add-ins.
  4. Scoop tablespoon-sized portions of the mixture onto a baking sheet or plate lined with parchment paper.
  5. Chill in the refrigerator for at least 30 minutes to firm up.
