Ingredients:

  • 1 lb fresh strawberries, hulled and sliced
  • 1 tbsp lemon juice
  • 1 tsp balsamic glaze
  • 1 tbsp honey
  • 1 cup heavy whipping cream, chilled
  • 0.5 cup plain Greek yogurt
  • 1 tsp vanilla bean paste
  • 5 large store-bought meringue nests, crushed
  • 4 sprigs fresh mint leaves

Instructions:

  1. In a small bowl, combine half of the sliced strawberries with 1 tablespoon of lemon juice, 1 teaspoon of balsamic glaze, and 1 tablespoon of honey.
  2. Lightly mash a few of the strawberries with a fork to release their juices. Let the mixture sit (macerate) for 20 minutes to create a natural ruby-red syrup.
  3. In a chilled large glass bowl, combine the heavy whipping cream and vanilla bean paste. Use an electric mixer to whip until stiff peaks form.
  4. Using a silicon spatula, gently fold the plain Greek yogurt into the whipped cream until combined but still airy.
  5. Fold the macerated strawberry mixture and their syrup into the cream base, creating vibrant streaks.
  6. Just before serving, gently fold in the crushed meringue shards and remaining fresh strawberry slices.
  7. Divide into individual glasses and garnish with fresh mint leaves.
