Ingredients:
- 1 lb fresh strawberries, hulled and sliced
- 1 tbsp lemon juice
- 1 tsp balsamic glaze
- 1 tbsp honey
- 1 cup heavy whipping cream, chilled
- 0.5 cup plain Greek yogurt
- 1 tsp vanilla bean paste
- 5 large store-bought meringue nests, crushed
- 4 sprigs fresh mint leaves
Instructions:
- In a small bowl, combine half of the sliced strawberries with 1 tablespoon of lemon juice, 1 teaspoon of balsamic glaze, and 1 tablespoon of honey.
- Lightly mash a few of the strawberries with a fork to release their juices. Let the mixture sit (macerate) for 20 minutes to create a natural ruby-red syrup.
- In a chilled large glass bowl, combine the heavy whipping cream and vanilla bean paste. Use an electric mixer to whip until stiff peaks form.
- Using a silicon spatula, gently fold the plain Greek yogurt into the whipped cream until combined but still airy.
- Fold the macerated strawberry mixture and their syrup into the cream base, creating vibrant streaks.
- Just before serving, gently fold in the crushed meringue shards and remaining fresh strawberry slices.
- Divide into individual glasses and garnish with fresh mint leaves.
