Ingredients:
- 1 lb (450g) large shrimp, peeled and deveined
- 2 tbsp (30ml) extra virgin olive oil
- 3 cloves (9g) garlic, minced
- 1 tbsp (15ml) fresh lemon juice
- 1 tsp (2g) lemon zest
- ½ tsp (3g) kosher salt
- ¼ tsp (1g) freshly cracked black pepper
- ½ tsp (1g) smoked paprika
Instructions:
- In a large mixing bowl, whisk together the olive oil, minced garlic, lemon juice, lemon zest, salt, pepper, and smoked paprika until the salt is dissolved and the oil is emulsified.
- Add the shrimp to the bowl and toss gently to ensure every shrimp is fully coated. Let the shrimp marinate at room temperature for exactly 15 minutes.
- Preheat your grill to medium-high heat. If using skewers, thread the shrimp tightly.
- Place shrimp on the grill and sear for 2–3 minutes per side until they turn opaque and develop a charred, golden-brown exterior. Remove immediately when they form a 'C' shape.
