Ingredients:

  • 1 lb (450g) large shrimp, peeled and deveined
  • 2 tbsp (30ml) extra virgin olive oil
  • 3 cloves (9g) garlic, minced
  • 1 tbsp (15ml) fresh lemon juice
  • 1 tsp (2g) lemon zest
  • ½ tsp (3g) kosher salt
  • ¼ tsp (1g) freshly cracked black pepper
  • ½ tsp (1g) smoked paprika

Instructions:

  1. In a large mixing bowl, whisk together the olive oil, minced garlic, lemon juice, lemon zest, salt, pepper, and smoked paprika until the salt is dissolved and the oil is emulsified.
  2. Add the shrimp to the bowl and toss gently to ensure every shrimp is fully coated. Let the shrimp marinate at room temperature for exactly 15 minutes.
  3. Preheat your grill to medium-high heat. If using skewers, thread the shrimp tightly.
  4. Place shrimp on the grill and sear for 2–3 minutes per side until they turn opaque and develop a charred, golden-brown exterior. Remove immediately when they form a 'C' shape.
