Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly brush the paper with olive oil.
- In a small bowl, thoroughly whisk together the honey, soy sauce, Dijon mustard, vinegar/lemon juice, garlic powder, pepper, and optional red pepper flakes until smooth to create the glaze.
- Pat the salmon fillets completely dry with kitchen paper. Place them on the prepared baking sheet, spaced well apart.
- Brush about half of the honey mixture evenly over the tops and sides of the salmon fillets. Reserve the remaining glaze.
- Place the salmon in the preheated oven and bake for 8 minutes.
- Remove the tray carefully. Brush the remaining glaze over the fillets. Return to the oven and bake for another 4–7 minutes, or until the salmon flakes easily with a fork and the internal temperature reaches 145°F (63°C).
- Let the salmon rest for 2 minutes before serving immediately alongside steamed green beans and rice.
