Ingredients:

  • 3 large firm-ripe peaches, halved and pitted (approx. 1.5 lbs / 680g)
  • 2 tbsp melted unsalted butter
  • 1/4 tsp sea salt
  • 3 tbsp light brown sugar, packed
  • 1/2 tsp ground cinnamon
  • 1 tsp vanilla extract

Instructions:

  1. Pat the peach halves dry with a paper towel. Brush the cut side of each peach generously with melted butter and a pinch of sea salt. In a small bowl, whisk together the brown sugar, cinnamon, and vanilla until a thick paste forms.
  2. Preheat the grill to medium-high heat. Place the peaches cut-side down directly onto the grates, pressing down lightly with tongs. Grill for 3 to 5 minutes without moving them until mahogany-colored grill marks appear and the fruit smells toasted.
  3. Flip the peaches over to the skin side. Quickly brush the brown sugar mixture over the grilled faces. Grill for an additional 2 minutes, allowing the residual heat to melt the sugar into a glossy, bubbling glaze. Remove from heat immediately once the sugar has liquefied.
