- 5 cups (750 g) fresh or frozen peaches, sliced
- ½ cup (100 g) granulated sugar (or coconut sugar)
- 1 tablespoon (8 g) cornstarch or arrowroot powder
- 1 teaspoon vanilla extract
- ½ teaspoon cinnamon
- Pinch of sea salt
- 1 tablespoon lemon juice
- 1 cup (120 g) certified gluten-free all-purpose flour blend (must contain xanthan gum)
- 2 tablespoons (25 g) granulated sugar, plus extra for sprinkling
- 1 teaspoon baking powder
- ¼ teaspoon sea salt
- ¼ cup (55 g) cold vegan butter (cut into small cubes) or solid coconut oil
- ⅓ cup (80 ml) cold non-dairy milk (oat or almond work well)
- Vegan vanilla ice cream or non-dairy whipped cream (For serving)
Instructions:
- Preheat oven to 375°F (190°C). Lightly grease your 8x8 or 9x9 inch baking dish.
- In a large bowl, combine the sliced peaches, sugar, cornstarch (or arrowroot), vanilla, cinnamon, salt, and lemon juice. Toss gently until the peaches are evenly coated and the cornstarch is dissolved. Pour the peach mixture evenly into the prepared baking dish.
- In a separate medium bowl, whisk together the gluten-free flour blend, sugar, baking powder, and salt for the cobbler topping.
- Add the cold, cubed vegan butter (or coconut oil) to the dry mixture. Use a pastry blender or your fingers to cut the fat into the flour until the mixture resembles coarse, pea-sized crumbs. Do not overmix.
- Gradually add the cold non-dairy milk, mixing only until just combined. The dough will be shaggy and slightly sticky.
- Drop large spoonfuls of the cobbler dough directly over the peach filling, leaving some gaps for the filling to bubble through. Sprinkle the topping with 1-2 teaspoons of sugar for extra crunch and color.
- Bake for 35 to 45 minutes, or until the topping is golden brown, cooked through, and the peach filling is visibly bubbling around the edges.
- Allow the Easy Vegan Gluten Free Peach Cobbler to cool for at least 10 minutes before serving. This allows the filling to thicken sufficiently. Serve warm, optionally topped with vegan vanilla ice cream.
