Ingredients:

  • 3 lbs Yukon Gold potatoes, peeled and cut into 1-inch chunks
  • 1 tbsp sea salt
  • 6 cloves fresh garlic, peeled and smashed
  • 1/2 cup unsalted butter, cubed, room temperature
  • 1 cup whole milk
  • 1/2 tsp freshly cracked black pepper
  • 2 tbsp fresh chives, finely snipped

Instructions:

  1. Peel 3 lbs Yukon Gold potatoes and cut them into 1 inch chunks.
  2. Place potatoes and 6 cloves fresh garlic (smashed) in a large pot.
  3. Add 1 tbsp sea salt and cover with cold water by at least an inch.
  4. Bring to a boil, then reduce heat and simmer 20 minutes until potatoes are fork tender and falling apart.
  5. Drain well and return potatoes to the hot pot for 2 minutes over low heat.
  6. Add 1/2 cup unsalted butter (cubed) and mash thoroughly.
  7. Warm 1 cup whole milk in the microwave or a small saucepan.
  8. Gradually stir in the milk and 1/2 tsp freshly cracked black pepper.
  9. Beat with a wooden spoon until light and airy.
  10. Top with 2 tbsp fresh chives just before serving.
