Ingredients:
- 3 lbs Yukon Gold potatoes, peeled and cut into 1-inch chunks
- 1 tbsp sea salt
- 6 cloves fresh garlic, peeled and smashed
- 1/2 cup unsalted butter, cubed, room temperature
- 1 cup whole milk
- 1/2 tsp freshly cracked black pepper
- 2 tbsp fresh chives, finely snipped
Instructions:
- Peel 3 lbs Yukon Gold potatoes and cut them into 1 inch chunks.
- Place potatoes and 6 cloves fresh garlic (smashed) in a large pot.
- Add 1 tbsp sea salt and cover with cold water by at least an inch.
- Bring to a boil, then reduce heat and simmer 20 minutes until potatoes are fork tender and falling apart.
- Drain well and return potatoes to the hot pot for 2 minutes over low heat.
- Add 1/2 cup unsalted butter (cubed) and mash thoroughly.
- Warm 1 cup whole milk in the microwave or a small saucepan.
- Gradually stir in the milk and 1/2 tsp freshly cracked black pepper.
- Beat with a wooden spoon until light and airy.
- Top with 2 tbsp fresh chives just before serving.
