Ingredients:
- 1 lb (450g) ground beef (85% lean)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz / 410g) diced tomatoes (with juice)
- 1 can (15 oz / 425g) kidney beans, drained and rinsed
- 1 can (15 oz / 425g) black beans, drained and rinsed
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- ½ teaspoon smoked paprika
- ½ teaspoon salt, adjust to taste
- ¼ teaspoon black pepper
- 1 cup (240ml) beef broth (or water)
Instructions:
- Sauté onions in the pot over medium heat until translucent (about 5 minutes). Add minced garlic and cook for an additional minute until fragrant.
- Brown ground beef in the pot, breaking it apart with the spoon, until fully cooked (about 5-7 minutes). Drain excess fat, if necessary.
- Stir in chili powder, cumin, smoked paprika, salt, and pepper. Cook for about 1 minute to toast the spices.
- Add diced tomatoes (including juice), kidney beans, black beans, and beef broth.
- Bring to a simmer and reduce heat to low. Cover and let cook for 20 minutes, stirring occasionally.
- Taste and adjust seasonings as needed. Serve hot, garnished with your favorite toppings.
