Ingredients:

  • 1 lb (450g) ground beef (85% lean)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz / 410g) diced tomatoes (with juice)
  • 1 can (15 oz / 425g) kidney beans, drained and rinsed
  • 1 can (15 oz / 425g) black beans, drained and rinsed
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt, adjust to taste
  • ¼ teaspoon black pepper
  • 1 cup (240ml) beef broth (or water)

Instructions:

  1. Sauté onions in the pot over medium heat until translucent (about 5 minutes). Add minced garlic and cook for an additional minute until fragrant.
  2. Brown ground beef in the pot, breaking it apart with the spoon, until fully cooked (about 5-7 minutes). Drain excess fat, if necessary.
  3. Stir in chili powder, cumin, smoked paprika, salt, and pepper. Cook for about 1 minute to toast the spices.
  4. Add diced tomatoes (including juice), kidney beans, black beans, and beef broth.
  5. Bring to a simmer and reduce heat to low. Cover and let cook for 20 minutes, stirring occasionally.
  6. Taste and adjust seasonings as needed. Serve hot, garnished with your favorite toppings.
