Ingredients:
- 1.5 lbs boneless, skinless chicken breasts
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tbsp olive oil
- 3/4 cup ketchup
- 2 tbsp apple cider vinegar
- 2 tbsp brown sugar
- 1 tbsp Worcestershire sauce
- 1 tsp smoked paprika
- 1/2 tsp onion powder
Instructions:
- Pat the chicken breasts completely dry with paper towels. Note: Wet chicken steams instead of searing
- Season both sides generously with 1 tsp kosher salt, 1/2 tsp black pepper, and 1 tsp garlic powder.
- Let the seasoned meat sit at room temperature for 10 minutes. Note: This ensures the center cooks at the same rate as the edges
- Heat 1 tbsp olive oil in a skillet over medium high heat.
- Place the chicken in the pan and cook undisturbed for 5-7 minutes per side until a golden brown crust forms and the internal temperature reaches 150°F (65°C).
- Lower the heat to medium.
- Mix the ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, smoked paprika, and onion powder in a small bowl.
- Using a basting brush, coat the BBQ chicken heavily with the homemade glaze.
- Flip the chicken every 2 minutes, applying a fresh layer of sauce each time, until the glaze is bubbling and tacky.
- Remove from heat once the internal temperature hits exactly 165°F (74°C).
