Ingredients:

  • 2 medium zucchini (1 lb / 450g), cut into spears
  • 1 tbsp extra virgin olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked black pepper
  • 2 tbsp grated Parmesan cheese
  • 1 tsp fresh lemon juice
  • 1 tbsp chopped fresh parsley

Instructions:

  1. Wash the zucchini and pat them completely dry with paper towels. Slice each zucchini lengthwise into quarters, then slice those quarters lengthwise again to create uniform spears (approximately 3 inches long).
  2. In a large mixing bowl, toss the spears with olive oil, garlic powder, salt, and pepper. Ensure every inch of the zucchini is coated in a thin, glistening layer of oil.
  3. Preheat the air fryer to 400°F (200°C). Arrange the spears in the basket in a single layer—do not stack them. Air fry for 10 minutes, shaking the basket halfway through. Remove when the edges are charred golden-brown.
  4. Immediately upon removing from the heat, sprinkle with Parmesan cheese and drizzle with fresh lemon juice. Garnish with parsley.
