Ingredients:
- 2 Tbsp Coarse Sea Salt or Maldon Flakes
- 2 small Lime Wedges (for rimming and garnish)
- 3 fl oz (90 ml) 100% Agave Tequila (Blanco/Silver)
- 2 fl oz (60 ml) Freshly Squeezed Lime Juice
- 5 fl oz (15 ml) Light Agave Nectar (or simple syrup)
- 1 fl oz (30 ml) Chilled Water or Soda Water (Optional)
- Ice Cubes (As needed)
Instructions:
- Place the coarse salt onto a small, flat plate. Take a lime wedge and run it around the rim of each rocks glass. Gently invert the glass and press the wet rim into the salt to create an even coating. Set aside.
- Vigorously juice the fresh limes until you have exactly 60 ml (2 fl oz) of fresh juice.
- Pour the tequila (90 ml / 3 fl oz), fresh lime juice (60 ml / 2 fl oz), and agave nectar (15 ml / 0.5 fl oz) directly into the cocktail shaker tin.
- Fill the shaker 3/4 full with fresh ice cubes. Secure the lid tightly.
- Shake the mixture very hard and fast for 15–20 seconds. The shaker should become thoroughly frosted and almost too cold to hold, ensuring proper chilling and dilution.
- Remove the lid and use the strainer to pour the mixture immediately into the prepared, ice-filled rocks glasses.
- If desired, add a splash (30 ml / 1 fl oz) of chilled water or soda water to the top of the drink to lengthen it.
- Finish with a fresh lime wedge or wheel. Serve immediately.
