Instructions:

  1. Chop the dried apricots into small, uniform ¼-inch pieces to ensure consistent rehydration.
  2. Combine the chopped apricots, water, and sea salt in a medium saucepan.
  3. Bring the mixture to a gentle boil over medium heat, then immediately reduce to a simmer, stirring frequently to prevent sticking, until the liquid has reduced by half and thickened.
  4. Remove the pan from the heat and stir in the fresh lemon juice and vanilla extract.
  5. Allow the compote to cool completely in the pan to allow the consistency to thicken further.
