Instructions:
- Chop the dried apricots into small, uniform ¼-inch pieces to ensure consistent rehydration.
- Combine the chopped apricots, water, and sea salt in a medium saucepan.
- Bring the mixture to a gentle boil over medium heat, then immediately reduce to a simmer, stirring frequently to prevent sticking, until the liquid has reduced by half and thickened.
- Remove the pan from the heat and stir in the fresh lemon juice and vanilla extract.
- Allow the compote to cool completely in the pan to allow the consistency to thicken further.
