Ingredients:

  • 1 pound fresh spinach, thoroughly washed and drained
  • 4 cloves garlic, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Zest of 1 lemon (optional, for added flavor)

Instructions:

  1. Wash and drain the spinach; set aside. Slice the garlic thinly. Zest and juice the lemon.
  2. In a large skillet or wok, add the olive oil and heat over medium heat.
  3. Once the oil is hot, add the sliced garlic. Sauté until the garlic is golden and fragrant, about 1-2 minutes, being careful not to burn it.
  4. Add the spinach to the skillet in batches if necessary. Stir constantly until wilted, about 2-3 minutes.
  5. Remove from heat and drizzle with lemon juice. Season with salt, pepper, and lemon zest if desired. Toss well to combine.
  6. Transfer to a serving dish and enjoy while hot.
