Ingredients:
- 1 pound fresh spinach, thoroughly washed and drained
- 4 cloves garlic, thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt, to taste
- Freshly ground black pepper, to taste
- Zest of 1 lemon (optional, for added flavor)
Instructions:
- Wash and drain the spinach; set aside. Slice the garlic thinly. Zest and juice the lemon.
- In a large skillet or wok, add the olive oil and heat over medium heat.
- Once the oil is hot, add the sliced garlic. Sauté until the garlic is golden and fragrant, about 1-2 minutes, being careful not to burn it.
- Add the spinach to the skillet in batches if necessary. Stir constantly until wilted, about 2-3 minutes.
- Remove from heat and drizzle with lemon juice. Season with salt, pepper, and lemon zest if desired. Toss well to combine.
- Transfer to a serving dish and enjoy while hot.
