Ingredients:
- 60g good quality dark chocolate (70% cocoa solids), chopped
- 60g unsalted butter, cubed, plus extra for greasing
- 2 large eggs
- 2 large egg yolks
- 60g caster sugar
- 1 tbsp plain flour, plus extra for dusting
- Pinch of sea salt
- Icing sugar, for dusting (optional)
- Fresh berries (raspberries, strawberries), for garnish (optional)
- Vanilla ice cream, for serving (optional)
Instructions:
- Grease ramekins with butter and dust with flour. Tap out any excess flour.
- Gently melt the chocolate and butter together using a double boiler or in the microwave in 30-second intervals, stirring in between, until smooth.
- In a separate bowl, whisk together the eggs, egg yolks, and sugar until pale and slightly thickened.
- Gently fold the melted chocolate mixture into the egg mixture until just combined.
- Sift in the flour and salt and fold gently until just incorporated. Do not overmix.
- Divide the batter evenly between the prepared ramekins.
- Bake in a preheated oven at 200°C (180°C fan/Gas Mark 6) for 12-15 minutes, or until the edges are set and the center is still soft.
- Let the lava puddings rest in the ramekins for 1 minute before inverting onto plates.
- Dust with icing sugar (optional) and serve immediately with fresh berries and/or vanilla ice cream.
