Ingredients:

  • 60g good quality dark chocolate (70% cocoa solids), chopped
  • 60g unsalted butter, cubed, plus extra for greasing
  • 2 large eggs
  • 2 large egg yolks
  • 60g caster sugar
  • 1 tbsp plain flour, plus extra for dusting
  • Pinch of sea salt
  • Icing sugar, for dusting (optional)
  • Fresh berries (raspberries, strawberries), for garnish (optional)
  • Vanilla ice cream, for serving (optional)

Instructions:

  1. Grease ramekins with butter and dust with flour. Tap out any excess flour.
  2. Gently melt the chocolate and butter together using a double boiler or in the microwave in 30-second intervals, stirring in between, until smooth.
  3. In a separate bowl, whisk together the eggs, egg yolks, and sugar until pale and slightly thickened.
  4. Gently fold the melted chocolate mixture into the egg mixture until just combined.
  5. Sift in the flour and salt and fold gently until just incorporated. Do not overmix.
  6. Divide the batter evenly between the prepared ramekins.
  7. Bake in a preheated oven at 200°C (180°C fan/Gas Mark 6) for 12-15 minutes, or until the edges are set and the center is still soft.
  8. Let the lava puddings rest in the ramekins for 1 minute before inverting onto plates.
  9. Dust with icing sugar (optional) and serve immediately with fresh berries and/or vanilla ice cream.
