Ingredients:

  • 1 cup (150g) raw cashews, soaked
  • ¼ cup (60ml) water, plus more as needed
  • 2 tablespoons fresh dill, finely chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon salt, or to taste
  • Pinch of black pepper, to taste
  • 1 large English cucumber
  • 1-2 tablespoons everything bagel seasoning

Instructions:

  1. Soak the raw cashews in hot water for at least 30 minutes (or overnight in cold water). Drain well.
  2. Combine the soaked and drained cashews, water, dill, lemon juice, lemon zest, garlic powder, onion powder, salt, and pepper in a high-speed blender or food processor. Blend until completely smooth, adding more water one tablespoon at a time if needed to reach a creamy consistency.
  3. Wash and dry the cucumber. Slice the cucumber into ¼-inch (6mm) thick rounds.
  4. Spoon or pipe a small amount of cashew cream onto each cucumber round.
  5. Sprinkle the cashew cream with everything bagel seasoning.
  6. Refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled or at room temperature.
