Ingredients:
- 1 cup (150g) raw cashews, soaked
- ¼ cup (60ml) water, plus more as needed
- 2 tablespoons fresh dill, finely chopped
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- ½ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon salt, or to taste
- Pinch of black pepper, to taste
- 1 large English cucumber
- 1-2 tablespoons everything bagel seasoning
Instructions:
- Soak the raw cashews in hot water for at least 30 minutes (or overnight in cold water). Drain well.
- Combine the soaked and drained cashews, water, dill, lemon juice, lemon zest, garlic powder, onion powder, salt, and pepper in a high-speed blender or food processor. Blend until completely smooth, adding more water one tablespoon at a time if needed to reach a creamy consistency.
- Wash and dry the cucumber. Slice the cucumber into ¼-inch (6mm) thick rounds.
- Spoon or pipe a small amount of cashew cream onto each cucumber round.
- Sprinkle the cashew cream with everything bagel seasoning.
- Refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled or at room temperature.
