Ingredients:
- 2 cups broccoli florets (about 200g)
- 1 cup carrots, shredded (about 120g)
- 1/2 cup red cabbage, shredded (about 50g)
- 1/4 cup red onion, finely chopped (about 40g)
- 1/3 cup mayonnaise (about 80g)
- 2 tablespoons apple cider vinegar (30ml)
- 1 teaspoon Dijon mustard
- 1 tablespoon honey (optional, about 15g)
- Salt and pepper to taste
Instructions:
- Wash and dry broccoli; cut into small florets. Shred carrots and red cabbage. Finely chop red onion.
- In a mixing bowl, combine mayonnaise, apple cider vinegar, Dijon mustard, and honey. Whisk until smooth; season with salt and pepper to taste.
- In a large bowl, add the broccoli florets, shredded carrots, red cabbage, and red onion. Pour the dressing over the vegetables.
- Toss until all vegetables are coated evenly with the dressing.
- Cover and refrigerate for at least 30 minutes to allow flavors to meld.
- Toss again before serving; adjust seasoning if necessary.
