Ingredients:

  • 2 cups broccoli florets (about 200g)
  • 1 cup carrots, shredded (about 120g)
  • 1/2 cup red cabbage, shredded (about 50g)
  • 1/4 cup red onion, finely chopped (about 40g)
  • 1/3 cup mayonnaise (about 80g)
  • 2 tablespoons apple cider vinegar (30ml)
  • 1 teaspoon Dijon mustard
  • 1 tablespoon honey (optional, about 15g)
  • Salt and pepper to taste

Instructions:

  1. Wash and dry broccoli; cut into small florets. Shred carrots and red cabbage. Finely chop red onion.
  2. In a mixing bowl, combine mayonnaise, apple cider vinegar, Dijon mustard, and honey. Whisk until smooth; season with salt and pepper to taste.
  3. In a large bowl, add the broccoli florets, shredded carrots, red cabbage, and red onion. Pour the dressing over the vegetables.
  4. Toss until all vegetables are coated evenly with the dressing.
  5. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  6. Toss again before serving; adjust seasoning if necessary.
