Ingredients:

  • 3 lbs boneless skinless chicken thighs
  • 1 tbsp packed brown sugar
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp Kosher salt
  • 0.5 tsp cracked black pepper
  • 1.5 cups BBQ sauce
  • 2 tbsp apple cider vinegar
  • 1 tbsp Worcestershire sauce
  • 1 tbsp unsalted butter

Instructions:

  1. Pat the chicken thighs completely dry with paper towels. In a small bowl, combine brown sugar, smoked paprika, garlic powder, onion powder, salt, and pepper. Generously coat the chicken on all sides with the rub.
  2. In the bottom of your slow cooker, combine BBQ sauce, apple cider vinegar, and Worcestershire sauce.
  3. Place the seasoned chicken into the sauce, turning once to coat. Arrange them in a single layer if possible for even cooking.
  4. Cover and cook on LOW for 4 hours until the meat is flaky and tender.
  5. Remove the chicken to a large bowl. Whisk the unsalted butter into the remaining liquid in the pot to create a glossy glaze.
  6. Shred the chicken using two forks. Return the meat to the pot and toss well to coat in the sauce.
