Ingredients:

  • 2 medium zucchini (about 500g), grated
  • 1 teaspoon salt (5g)
  • ½ cup all-purpose flour (60g), or gluten-free flour
  • 1 large egg, beaten
  • ½ cup crumbled feta cheese (75g)
  • ¼ cup chopped fresh mint (15g)
  • ¼ cup chopped green onions (25g)
  • ½ teaspoon black pepper (2g)
  • ½ teaspoon garlic powder (2g)
  • 2 tablespoons olive oil (30ml), for frying

Instructions:

  1. Grate zucchini into a bowl and sprinkle with salt. Let it sit for 10 minutes to draw out moisture.
  2. Squeeze grated zucchini in a clean kitchen towel or paper towels to remove excess moisture.
  3. In a mixing bowl, combine the drained zucchini, flour, beaten egg, feta cheese, mint, green onions, black pepper, and garlic powder. Mix until just combined.
  4. Heat olive oil in a skillet over medium heat.
  5. Drop spoonfuls of the mixture into the hot skillet, flattening them slightly with a spatula. Cook until golden brown, about 3-4 minutes per side.
  6. Remove fritters from the skillet and place them on paper towels to drain excess oil. Serve warm.
