Ingredients:

  • 2 large sweet potatoes (approx. 700g / 1.5 lbs), peeled and cut into 1/2-inch (1.25cm) thick fries
  • 2 tablespoons olive oil (30 ml)
  • 1 teaspoon cornstarch (5 ml)
  • 1/2 teaspoon garlic powder (2.5 ml)
  • 1/2 teaspoon onion powder (2.5 ml)
  • 1/4 teaspoon smoked paprika (1.25 ml)
  • 1/4 teaspoon cayenne pepper (optional, 1.25 ml)
  • 1/2 teaspoon dried rosemary, crushed (2.5 ml)
  • Salt and freshly ground black pepper to taste

Instructions:

  1. Preheat oven to 400°F (200°C/ Gas Mark 6).
  2. Peel and cut sweet potatoes into even-sized fries.
  3. In a large bowl, toss the sweet potato fries with cornstarch.
  4. Drizzle with olive oil and toss to coat. Add garlic powder, onion powder, smoked paprika, cayenne pepper (if using), dried rosemary, salt, and pepper. Toss well to ensure even coating.
  5. Spread the fries in a single layer on a baking sheet lined with parchment paper (if using). Avoid overcrowding the pan.
  6. Bake for 15 minutes.
  7. Flip the fries and continue baking for another 10-15 minutes, or until golden brown and crispy. Keep an eye on them to prevent burning.
  8. Remove from oven and serve immediately.
