Ingredients:
- 2 large sweet potatoes (approx. 700g / 1.5 lbs), peeled and cut into 1/2-inch (1.25cm) thick fries
- 2 tablespoons olive oil (30 ml)
- 1 teaspoon cornstarch (5 ml)
- 1/2 teaspoon garlic powder (2.5 ml)
- 1/2 teaspoon onion powder (2.5 ml)
- 1/4 teaspoon smoked paprika (1.25 ml)
- 1/4 teaspoon cayenne pepper (optional, 1.25 ml)
- 1/2 teaspoon dried rosemary, crushed (2.5 ml)
- Salt and freshly ground black pepper to taste
Instructions:
- Preheat oven to 400°F (200°C/ Gas Mark 6).
- Peel and cut sweet potatoes into even-sized fries.
- In a large bowl, toss the sweet potato fries with cornstarch.
- Drizzle with olive oil and toss to coat. Add garlic powder, onion powder, smoked paprika, cayenne pepper (if using), dried rosemary, salt, and pepper. Toss well to ensure even coating.
- Spread the fries in a single layer on a baking sheet lined with parchment paper (if using). Avoid overcrowding the pan.
- Bake for 15 minutes.
- Flip the fries and continue baking for another 10-15 minutes, or until golden brown and crispy. Keep an eye on them to prevent burning.
- Remove from oven and serve immediately.
