Ingredients:
- 2 cups all-purpose flour
- ¾ cup hot water
- ½ teaspoon salt
- 6-8 scallions, finely chopped
- 2 tablespoons vegetable oil (for filling)
- 1 teaspoon sesame oil (optional, for extra flavor)
- 4 tablespoons vegetable oil (for frying)
Instructions:
- Combine flour and salt in a mixing bowl.
- Gradually add hot water while mixing until a dough forms.
- Knead dough on a floured surface for about 5 minutes until smooth.
- Wrap in plastic wrap and let it rest for 30 minutes.
- In a small bowl, mix chopped scallions with vegetable oil and sesame oil (if using).
- Divide the rested dough into 4 equal pieces.
- Roll out each piece into a thin circle (about 8 inches in diameter).
- Brush with a thin layer of oil and sprinkle a quarter of the scallion mixture evenly.
- Roll the dough tightly into a log, then coil the log into a spiral shape and flatten gently.
- Heat 2 tablespoons of vegetable oil in a skillet over medium heat.
- Fry each pancake for about 2-3 minutes on each side until golden brown and crispy.
- Allow to cool slightly, slice into wedges, and serve warm.
