Ingredients:

  • 2 cups all-purpose flour
  • ¾ cup hot water
  • ½ teaspoon salt
  • 6-8 scallions, finely chopped
  • 2 tablespoons vegetable oil (for filling)
  • 1 teaspoon sesame oil (optional, for extra flavor)
  • 4 tablespoons vegetable oil (for frying)

Instructions:

  1. Combine flour and salt in a mixing bowl.
  2. Gradually add hot water while mixing until a dough forms.
  3. Knead dough on a floured surface for about 5 minutes until smooth.
  4. Wrap in plastic wrap and let it rest for 30 minutes.
  5. In a small bowl, mix chopped scallions with vegetable oil and sesame oil (if using).
  6. Divide the rested dough into 4 equal pieces.
  7. Roll out each piece into a thin circle (about 8 inches in diameter).
  8. Brush with a thin layer of oil and sprinkle a quarter of the scallion mixture evenly.
  9. Roll the dough tightly into a log, then coil the log into a spiral shape and flatten gently.
  10. Heat 2 tablespoons of vegetable oil in a skillet over medium heat.
  11. Fry each pancake for about 2-3 minutes on each side until golden brown and crispy.
  12. Allow to cool slightly, slice into wedges, and serve warm.
