Ingredients:

  • 1 pound (450g) fresh broccoli, trimmed and cut into florets
  • 3 tablespoons (45ml) olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper
  • Zest of 1 lemon
  • Juice of ½ lemon
  • Optional: Grated Parmesan cheese for garnish

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. Wash and trim the broccoli, cutting it into equal-sized florets. Pat the florets dry to remove excess moisture.
  3. In a mixing bowl, combine the broccoli florets, olive oil, minced garlic, salt, and pepper. Toss until the broccoli is evenly coated.
  4. Spread the seasoned broccoli in a single layer on the baking sheet. Roast in the preheated oven for 18–20 minutes, stirring halfway, until tender and slightly crispy.
  5. Remove the broccoli from the oven and drizzle with lemon juice. Sprinkle with lemon zest and Parmesan, if using.
  6. Transfer to a serving dish and enjoy warm.
