Ingredients:

  • 2 lbs (900g) baby potatoes, halved or quartered depending on size
  • 4 tablespoons (60ml) olive oil
  • 1 teaspoon sea salt (5g)
  • 1/2 teaspoon black pepper (2g)
  • 1 tablespoon (15g) fresh rosemary, finely chopped (or 1 teaspoon dried)
  • 1 tablespoon (15g) fresh thyme, finely chopped (or 1 teaspoon dried)
  • Optional: 2 cloves garlic, minced (about 6g)

Instructions:

  1. Preheat the Oven: Set your oven to 425°F (220°C).
  2. Prepare the Potatoes: Wash and halve or quarter the baby potatoes, placing them in a large mixing bowl.
  3. Season the Potatoes: Add olive oil, sea salt, black pepper, chopped herbs, and minced garlic (if using). Toss until the potatoes are evenly coated.
  4. Arrange on Baking Sheet: Spread the seasoned potatoes in a single layer on the baking sheet.
  5. Roast the Potatoes: Place them in the oven and roast for 40-45 minutes, shaking the pan halfway through, until golden brown and crispy.
