Ingredients:

  • 1 pound (450g) fresh green beans, trimmed
  • 2 tablespoons unsalted butter (30g)
  • 1 tablespoon olive oil (15ml)
  • 1/2 cup (75g) sliced almonds, toasted
  • 2 cloves garlic, minced
  • Salt, to taste
  • Black pepper, to taste
  • Juice of half a lemon (optional)

Instructions:

  1. Trim the ends from the green beans.
  2. Bring a large pot of salted water to a boil.
  3. Blanch the green beans by adding them to the boiling water for 3-4 minutes until vibrant green and tender-crisp.
  4. Drain beans and transfer them immediately to an ice bath to stop cooking.
  5. In a small frying pan over medium heat, toast sliced almonds until golden, about 3-4 minutes, stirring frequently. Remove and set aside.
  6. In a large skillet, heat olive oil and butter over medium heat.
  7. Add minced garlic and cook until fragrant, about 30 seconds.
  8. Add drained green beans to the skillet, season with salt and pepper, and sauté for 3-5 minutes until heated through.
  9. Toss in toasted almonds and lemon juice (if using).
  10. Serve hot, garnished with extra almonds if desired.
