Ingredients:
- 1 pound (450g) fresh green beans, trimmed
- 2 tablespoons unsalted butter (30g)
- 1 tablespoon olive oil (15ml)
- 1/2 cup (75g) sliced almonds, toasted
- 2 cloves garlic, minced
- Salt, to taste
- Black pepper, to taste
- Juice of half a lemon (optional)
Instructions:
- Trim the ends from the green beans.
- Bring a large pot of salted water to a boil.
- Blanch the green beans by adding them to the boiling water for 3-4 minutes until vibrant green and tender-crisp.
- Drain beans and transfer them immediately to an ice bath to stop cooking.
- In a small frying pan over medium heat, toast sliced almonds until golden, about 3-4 minutes, stirring frequently. Remove and set aside.
- In a large skillet, heat olive oil and butter over medium heat.
- Add minced garlic and cook until fragrant, about 30 seconds.
- Add drained green beans to the skillet, season with salt and pepper, and sauté for 3-5 minutes until heated through.
- Toss in toasted almonds and lemon juice (if using).
- Serve hot, garnished with extra almonds if desired.
