- 4 ounces (115g) feta cheese, crumbled
- 2 large eggs
- Pinch of red pepper flakes (optional)
- Freshly ground black pepper, to taste
- Fresh dill or parsley, chopped, for garnish
- Crusty bread, for serving
Instructions:
- Heat olive oil in a non-stick skillet over medium heat.
- Sprinkle the crumbled feta evenly into the hot skillet. Cook until the feta is melted and golden brown, forming a crispy base. Keep a close eye, as it can burn quickly.
- Gently crack the eggs directly onto the crispy feta.
- Cook the eggs to your desired doneness. For runny yolks, cook for about 3-4 minutes. For firmer yolks, cook for 5-6 minutes.
- Season with red pepper flakes (if using) and freshly ground black pepper. Garnish with chopped fresh dill or parsley.
- Serve immediately with crusty bread for dipping.
