Ingredients:

  • 1 tablespoon olive oil
  • 4 ounces (115g) feta cheese, crumbled
  • 2 large eggs
  • Pinch of red pepper flakes (optional)
  • Freshly ground black pepper, to taste
  • Fresh dill or parsley, chopped, for garnish
  • Crusty bread, for serving

Instructions:

  1. Heat olive oil in a non-stick skillet over medium heat.
  2. Sprinkle the crumbled feta evenly into the hot skillet. Cook until the feta is melted and golden brown, forming a crispy base. Keep a close eye, as it can burn quickly.
  3. Gently crack the eggs directly onto the crispy feta.
  4. Cook the eggs to your desired doneness. For runny yolks, cook for about 3-4 minutes. For firmer yolks, cook for 5-6 minutes.
  5. Season with red pepper flakes (if using) and freshly ground black pepper. Garnish with chopped fresh dill or parsley.
  6. Serve immediately with crusty bread for dipping.
