Ingredients:
- 2 lbs chicken wings, party style flats and drumettes separated
- 1 tbsp aluminum-free baking powder
- 1 tsp kosher salt
- 1 tsp freshly cracked black pepper
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 cup hot sauce
- 2 tbsp unsalted butter, melted
- 1 tsp apple cider vinegar
- 1 pinch stevia or monk fruit sweetener
Instructions:
- Use paper towels to pat the wings until they are bone-dry to the touch. Place them in a large bowl.
- Sprinkle the baking powder, salt, black pepper, garlic powder, and smoked paprika over the wings. Toss vigorously until every nook and cranny is coated in a thin, dusty film.
- Preheat your oven to 425°F (220°C). Arrange the wings on a wire rack set over a rimmed baking sheet, ensuring they aren't touching.
- Bake for 20 minutes, then flip each wing using tongs. Bake for another 20–25 minutes until the skin is bubbly, mahogany-colored, and firm to the touch.
- While wings finish, whisk together the hot sauce, melted butter, apple cider vinegar, and sweetener in a large bowl. Toss the hot wings in the glaze and serve immediately.
