Ingredients:
- 2 medium carrots, sliced
- 1 red bell pepper, diced
- 1 zucchini, sliced
- 1 cup broccoli florets
- 1 red onion, cut into wedges
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- Salt and pepper, to taste
Instructions:
- Wash and chop all vegetables into uniform pieces for even cooking.
- In a mixing bowl, combine olive oil, garlic powder, thyme, smoked paprika, salt, and pepper. Add the chopped vegetables and toss until evenly coated.
- Set the air fryer to 390°F (200°C) and let it heat for around 3-5 minutes.
- Place the seasoned vegetables into the air fryer basket in a single layer, ensuring there’s space for airflow.
- Cook for 15–20 minutes, shaking the basket halfway through to promote even browning. Cook until the vegetables are golden and tender.
- Transfer the roasted vegetables to a serving dish and enjoy them hot or warm as a delicious side!
