Ingredients:

  • 2 medium carrots, sliced
  • 1 red bell pepper, diced
  • 1 zucchini, sliced
  • 1 cup broccoli florets
  • 1 red onion, cut into wedges
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste

Instructions:

  1. Wash and chop all vegetables into uniform pieces for even cooking.
  2. In a mixing bowl, combine olive oil, garlic powder, thyme, smoked paprika, salt, and pepper. Add the chopped vegetables and toss until evenly coated.
  3. Set the air fryer to 390°F (200°C) and let it heat for around 3-5 minutes.
  4. Place the seasoned vegetables into the air fryer basket in a single layer, ensuring there’s space for airflow.
  5. Cook for 15–20 minutes, shaking the basket halfway through to promote even browning. Cook until the vegetables are golden and tender.
  6. Transfer the roasted vegetables to a serving dish and enjoy them hot or warm as a delicious side!
