Ingredients:

  • 4 cups broccoli slaw mix (about 400g)
  • 1 large carrot, grated (about 100g)
  • 1/2 cup red cabbage, shredded (about 50g)
  • 1/3 cup mayonnaise (about 80g)
  • 2 tablespoons apple cider vinegar (30ml)
  • 1 tablespoon honey (21g)
  • Salt and pepper, to taste

Instructions:

  1. Rinse and dry the broccoli slaw mix.
  2. Peel and grate the carrot.
  3. Shred the red cabbage.
  4. In a mixing bowl, whisk together mayonnaise, apple cider vinegar, honey, salt, and pepper until smooth.
  5. Add all prepared vegetables to the bowl with the dressing.
  6. Toss to combine thoroughly until all ingredients are well coated.
  7. Cover and refrigerate for at least 30 minutes before serving to meld flavors.
  8. Give the slaw a quick toss and enjoy cold, plain, or alongside your favorite dishes!
