Ingredients:
- 1 ½ cups (150g) Digestive biscuits, finely crushed
- 5 tablespoons (70g) unsalted butter, melted
- 2 tablespoons (25g) granulated sugar
- Pinch of salt
- 1/2 cup (100g) Granulated sugar
- 1/4 cup (60ml) Water
- 6 Tablespoons (85g) Butter, cut into cubes
- 1/4 cup (60ml) Heavy cream
- 1/2 teaspoon Sea salt
- 1 teaspoon Vanilla extract
- 24 oz (680g) cream cheese, softened
- ¾ cup (150g) granulated sugar
- 2 large eggs, room temperature
- ½ cup (120ml) heavy cream
- 2 teaspoons vanilla extract
- Pinch of salt
- 1/2 cup of Caramel sauce
- 4 full-size Twix candy bars, chopped
- Optional: Drizzle of melted chocolate
Instructions:
- Prepare the Biscuit Base: Combine crushed biscuits, melted butter, sugar, and salt. Press firmly into the bottom of the springform pan. Chill for at least 30 minutes.
- Make Caramel Sauce: Add sugar and water to saucepan and bring to a boil, do not stir. Once the mixture starts to turn amber in color, remove from heat and add the butter. Let butter melt into mixture and stir. Next add heavy cream, vanilla extract and salt. Mix well and allow to cool.
- Prepare the Cheesecake Filling: Beat softened cream cheese and sugar until smooth and creamy. Beat in eggs one at a time. Mix in heavy cream, vanilla extract, and salt. Gently fold in 1/2 cup caramel sauce.
- Assemble and Bake: Pour cheesecake filling over the chilled biscuit base. Smooth the top.
- Water Bath (Important!): Wrap the bottom of the springform pan tightly with aluminum foil. Place the pan in a larger baking sheet. Pour hot water into the baking sheet to reach about halfway up the sides of the springform pan.
- Bake: Bake at 325°F (160°C) for 60-75 minutes, or until the edges are set and the center jiggles slightly.
- Cool and Chill: Turn off the oven and crack the door slightly. Let the cheesecake cool in the oven for 1 hour. Remove from the water bath and let cool completely on a wire rack.
- Chill Overnight: Cover the cheesecake and refrigerate for at least 6 hours, or preferably overnight.
- Decorate: Carefully remove the cheesecake from the springform pan. Top with chopped Twix candy bars and a drizzle of melted chocolate (optional).
- Serve: Slice and serve chilled.
