Ingredients:

  • 6 large eggs (300g)
  • ½ cup whole milk (120ml)
  • 1 teaspoon salt (5g)
  • ½ teaspoon black pepper (2g)
  • 1 cup fresh spinach, chopped (30g)
  • ½ cup feta cheese, crumbled (75g)
  • ¼ cup diced bell pepper (40g)
  • ¼ cup diced onion (40g)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Sauté chopped onion and bell pepper in a small pan until softened. Add chopped spinach and cook until wilted.
  3. In a mixing bowl, whisk together eggs, milk, salt, and pepper until well combined.
  4. Fold the sautéed vegetable mixture into the egg mixture, followed by the crumbled feta.
  5. Pour the egg mixture into the silicone muffin pan, filling each cup about ¾ full.
  6. Bake in the preheated oven for about 20 minutes or until egg bites are set and slightly golden on top.
  7. Remove from the oven, allow to cool for a couple of minutes, then gently pop out the egg bites and serve warm.
