Ingredients:
- 6 large eggs (300g)
- ½ cup whole milk (120ml)
- 1 teaspoon salt (5g)
- ½ teaspoon black pepper (2g)
- 1 cup fresh spinach, chopped (30g)
- ½ cup feta cheese, crumbled (75g)
- ¼ cup diced bell pepper (40g)
- ¼ cup diced onion (40g)
Instructions:
- Preheat the oven to 350°F (175°C).
- Sauté chopped onion and bell pepper in a small pan until softened. Add chopped spinach and cook until wilted.
- In a mixing bowl, whisk together eggs, milk, salt, and pepper until well combined.
- Fold the sautéed vegetable mixture into the egg mixture, followed by the crumbled feta.
- Pour the egg mixture into the silicone muffin pan, filling each cup about ¾ full.
- Bake in the preheated oven for about 20 minutes or until egg bites are set and slightly golden on top.
- Remove from the oven, allow to cool for a couple of minutes, then gently pop out the egg bites and serve warm.
