Ingredients:

  • 2 pounds starchy potatoes, peeled and thinly sliced
  • 1 medium onion, finely chopped
  • 3 cups heavy cream
  • 2 cups shredded sharp cheddar cheese
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika (optional)
  • ¼ cup grated Parmesan cheese
  • Fresh parsley or chives for garnish (optional)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Grease the baking dish with butter or cooking spray.
  3. In a mixing bowl, whisk together the heavy cream, minced garlic, salt, black pepper, and smoked paprika.
  4. Layer half of the thinly sliced potatoes at the bottom of the baking dish, sprinkling half of the chopped onions over the potatoes.
  5. Pour half of the cream mixture over the first layer of potatoes and sprinkle with half of the cheddar cheese.
  6. Repeat the layering process with the remaining potatoes, onions, cream mixture, and cheddar cheese.
  7. Cover the dish with aluminium foil and bake for 1 hour.
  8. Remove the foil, sprinkle the grated Parmesan on top, and bake for an additional 15-25 minutes until golden and bubbling.
  9. Let it cool for 10 minutes before serving. Garnish with parsley or chives if desired.
