Ingredients:
- 2 pounds starchy potatoes, peeled and thinly sliced
- 1 medium onion, finely chopped
- 3 cups heavy cream
- 2 cups shredded sharp cheddar cheese
- 2 cloves garlic, minced
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon smoked paprika (optional)
- ¼ cup grated Parmesan cheese
- Fresh parsley or chives for garnish (optional)
Instructions:
- Preheat the oven to 375°F (190°C).
- Grease the baking dish with butter or cooking spray.
- In a mixing bowl, whisk together the heavy cream, minced garlic, salt, black pepper, and smoked paprika.
- Layer half of the thinly sliced potatoes at the bottom of the baking dish, sprinkling half of the chopped onions over the potatoes.
- Pour half of the cream mixture over the first layer of potatoes and sprinkle with half of the cheddar cheese.
- Repeat the layering process with the remaining potatoes, onions, cream mixture, and cheddar cheese.
- Cover the dish with aluminium foil and bake for 1 hour.
- Remove the foil, sprinkle the grated Parmesan on top, and bake for an additional 15-25 minutes until golden and bubbling.
- Let it cool for 10 minutes before serving. Garnish with parsley or chives if desired.
