  • 2 tbsp All-purpose flour
  • 6 cups Low-sodium chicken bone broth
  • 1/2 cup Sun-dried tomatoes (oil-packed), julienned
  • 1 tsp Dried oregano
  • 1/2 tsp Red pepper flakes
  • 1 tsp Kosher salt
  • 1/2 tsp Coarsely ground black pepper
  • 1 cup Heavy cream, room temperature
  • 1/2 cup Freshly grated Parmesan cheese
  • 2 cups Fresh baby spinach, stems removed
  • 8 oz Short pasta (like Cavatappi or Gnocchi), cooked separately

Instructions:

  1. Heat the sun dried tomato oil and butter in a large Dutch oven over medium high heat.
  2. Add the cubed chicken in a single layer and sear for 3-4 minutes until golden and crackling on at least two sides.
  3. Remove the chicken from the pot and set it aside on a plate to keep the juices contained.
  4. In the same pot, add the diced onion and sauté for 5 minutes until translucent and soft.
  5. Stir in the minced garlic, dried oregano, and red pepper flakes, cooking for 60 seconds until the aroma fills the room.
  6. Sprinkle the flour over the onions and whisk constantly for 1-2 minutes until it turns a light blond color.
  7. Slowly pour in the chicken bone broth while whisking continuously until the liquid is smooth and no lumps remain.
  8. Add the julienned sun dried tomatoes, salt, and black pepper, then return the chicken to the pot.
  9. Bring the mixture to a gentle simmer and cook for 10-12 minutes until the chicken is tender and fully opaque.
  10. Reduce heat to low and stir in the tempered heavy cream, Parmesan, and baby spinach until the spinach is wilted and the broth is silky.
  11. Serve by ladling the hot soup over portions of separately cooked pasta in deep bowls.
