Ingredients:

  • 16 oz elbow macaroni
  • 1 tbsp salt
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey
  • 1 tbsp yellow mustard
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 stalks celery
  • 1/2 cup red onion
  • 1/2 cup red bell pepper
  • 1/3 cup sweet pickle relish

Instructions:

  1. Boil the macaroni in salted water until al dente. Immediately drain in a colander and rinse under cold running water for 60 seconds to remove excess starch.
  2. In a large mixing bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, honey, mustard, salt, and pepper until the mixture is smooth.
  3. Fold the diced celery, red onion, bell pepper, and relish into the dressing.
  4. Add the cooled macaroni to the bowl and stir gently until evenly coated. Transfer to the fridge for at least one hour to allow flavors to marry.
