Ingredients:
- 16 oz elbow macaroni
- 1 tbsp salt
- 1 cup mayonnaise
- 1/2 cup sour cream
- 2 tbsp apple cider vinegar
- 1 tbsp honey
- 1 tbsp yellow mustard
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 stalks celery
- 1/2 cup red onion
- 1/2 cup red bell pepper
- 1/3 cup sweet pickle relish
Instructions:
- Boil the macaroni in salted water until al dente. Immediately drain in a colander and rinse under cold running water for 60 seconds to remove excess starch.
- In a large mixing bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, honey, mustard, salt, and pepper until the mixture is smooth.
- Fold the diced celery, red onion, bell pepper, and relish into the dressing.
- Add the cooled macaroni to the bowl and stir gently until evenly coated. Transfer to the fridge for at least one hour to allow flavors to marry.
