Ingredients:
- 8 oz (225 g) penne pasta
- Salt (for pasta water)
- 1 tbsp (15 ml) olive oil
- 12 oz (340 g) kielbasa sausage, sliced
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 bell pepper (any color), chopped
- 1 cup (150 g) frozen peas
- 1 cup (240 ml) chicken or vegetable broth
- 1 cup (240 ml) heavy cream
- 1 cup (100 g) shredded cheddar cheese
- 1/2 cup (50 g) grated Parmesan cheese
- 1 tsp (5 g) Italian seasoning
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Boil water in a large pot and add salt. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add the sliced kielbasa and cook until browned, about 5-6 minutes.
- Add diced onion and cook until translucent, about 3-4 minutes. Stir in minced garlic and chopped bell pepper. Sauté for 2-3 minutes. Add frozen peas and stir until just heated through.
- Pour in chicken or vegetable broth and bring to a simmer. Stir in heavy cream, bringing the mixture back to a gentle simmer. Add shredded cheddar cheese, grated Parmesan, and Italian seasoning. Mix until cheese is melted and smooth.
- Add cooked pasta to the skillet, tossing to combine and fully coat the pasta in sauce. Season with salt and pepper to taste.
- Garnish with chopped fresh parsley before serving.
