Ingredients:

  • 8 oz (225 g) penne pasta
  • Salt (for pasta water)
  • 1 tbsp (15 ml) olive oil
  • 12 oz (340 g) kielbasa sausage, sliced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper (any color), chopped
  • 1 cup (150 g) frozen peas
  • 1 cup (240 ml) chicken or vegetable broth
  • 1 cup (240 ml) heavy cream
  • 1 cup (100 g) shredded cheddar cheese
  • 1/2 cup (50 g) grated Parmesan cheese
  • 1 tsp (5 g) Italian seasoning
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Boil water in a large pot and add salt. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add the sliced kielbasa and cook until browned, about 5-6 minutes.
  3. Add diced onion and cook until translucent, about 3-4 minutes. Stir in minced garlic and chopped bell pepper. Sauté for 2-3 minutes. Add frozen peas and stir until just heated through.
  4. Pour in chicken or vegetable broth and bring to a simmer. Stir in heavy cream, bringing the mixture back to a gentle simmer. Add shredded cheddar cheese, grated Parmesan, and Italian seasoning. Mix until cheese is melted and smooth.
  5. Add cooked pasta to the skillet, tossing to combine and fully coat the pasta in sauce. Season with salt and pepper to taste.
  6. Garnish with chopped fresh parsley before serving.
