Ingredients:
- 2 tablespoons olive oil (30 ml)
- 1 medium yellow onion, chopped (about 1 cup)
- 2 cloves garlic, minced
- 10 ounces fresh spinach, roughly chopped (about 280g)
- 1/4 teaspoon ground nutmeg
- Salt and freshly ground black pepper to taste
- 3 large eggs
- 1 cup whole milk (240 ml)
- 1/2 cup heavy cream (120 ml)
- 1/4 cup all-purpose flour (30g)
- 8 ounces feta cheese, crumbled (about 225g)
- 1/4 cup grated Parmesan cheese
- 1/4 cup panko breadcrumbs
- 2 tablespoons melted unsalted butter (30g)
Instructions:
- Sauté onion and garlic in olive oil until softened. Add spinach and nutmeg; cook until wilted. Season with salt and pepper. Remove from heat and let cool slightly.
- In a bowl, whisk together eggs, milk, cream, and flour until smooth.
- Combine the spinach mixture, custard, feta cheese, and Parmesan cheese in a large bowl.
- Pour the mixture into the prepared baking dish.
- In a small bowl, mix panko breadcrumbs with melted butter. Sprinkle evenly over the casserole.
- Bake in a preheated oven at 375°F (190°C) for 30-35 minutes, or until golden brown and set. Let cool slightly before serving.
