Ingredients:
- 2 large (1.5 lb / 680g) globe eggplants
- 2 tbsp (30ml) extra virgin olive oil
- ½ tsp (3g) sea salt
- 3 tbsp (45ml) tahini
- ¼ cup (60ml) fresh lemon juice
- 3 cloves (9g) garlic, minced
- 2 tbsp (30ml) ice-cold water
- ½ tsp (2g) ground cumin
- ¼ tsp (1g) smoked paprika
- ½ tsp (3g) salt
- ¼ tsp (1g) cracked black pepper
Instructions:
- Preheat your oven to 400°F (200°C).
- Slice the eggplants in half lengthwise and score the flesh in a diamond pattern, being careful not to pierce the skin.
- Brush the scored flesh with olive oil and sprinkle with salt.
- Place eggplant cut-side down on a foil-lined sheet pan. Roast for 30–45 minutes until the skin is shriveled and the eggplant feels completely soft when pressed.
- Remove the eggplant from the oven and let it cool for 10 minutes.
- Using a spoon, scoop out the tender, steaming flesh into a bowl, discarding the charred skins.
- Place the roasted eggplant flesh into a food processor. Pulse until coarsely broken down.
- Add the tahini, lemon juice, minced garlic, cumin, smoked paprika, salt, and pepper.
- Process on high for 1–2 minutes. While the motor is running, slowly drizzle in ice-cold water one tablespoon at a time until the dip transforms into a pale, aerated, velvety cream.
