Ingredients:

  • ½ cup (120ml) Tahini
  • ¼ cup (60ml) Water
  • ¼ cup (60ml) Fresh Lemon Juice
  • 2 cloves Garlic, minced
  • 2 tablespoons Extra Virgin Olive Oil
  • 1 tablespoon Maple Syrup
  • ½ teaspoon Sea Salt
  • ¼ teaspoon Black Pepper
  • Pinch of cayenne pepper

Instructions:

  1. In a mixing bowl, add tahini, water, lemon juice, minced garlic, olive oil, maple syrup, salt, and pepper.
  2. Whisk vigorously until the dressing is smooth and creamy. It may seize up at first, but keep whisking!
  3. Add more water, one tablespoon at a time, until the desired consistency is reached.
  4. Taste the dressing and adjust the seasoning as needed. Add more lemon juice for tanginess, salt for flavour, or maple syrup for sweetness.
  5. For best results, let the dressing sit for at least 15 minutes to allow the flavours to meld.
