Ingredients:
- ½ cup (120ml) Tahini
- ¼ cup (60ml) Water
- ¼ cup (60ml) Fresh Lemon Juice
- 2 cloves Garlic, minced
- 2 tablespoons Extra Virgin Olive Oil
- 1 tablespoon Maple Syrup
- ½ teaspoon Sea Salt
- ¼ teaspoon Black Pepper
- Pinch of cayenne pepper
Instructions:
- In a mixing bowl, add tahini, water, lemon juice, minced garlic, olive oil, maple syrup, salt, and pepper.
- Whisk vigorously until the dressing is smooth and creamy. It may seize up at first, but keep whisking!
- Add more water, one tablespoon at a time, until the desired consistency is reached.
- Taste the dressing and adjust the seasoning as needed. Add more lemon juice for tanginess, salt for flavour, or maple syrup for sweetness.
- For best results, let the dressing sit for at least 15 minutes to allow the flavours to meld.
