Ingredients:

  • 4 cups (950 ml) Water
  • 1 teaspoon (6g) Salt
  • 1 cup (170g) Coarse Ground Polenta/Cornmeal (Not instant!)
  • 2 tablespoons (28g) Unsalted Butter
  • 1/4 cup (30g) Grated Parmesan Cheese (Optional)

Instructions:

  1. In a large, heavy-bottomed saucepan, bring the water and salt to a rolling boil over medium-high heat.
  2. Gradually whisk in the polenta in a slow, steady stream, whisking constantly to prevent lumps.
  3. Reduce heat to low. Cook, stirring frequently to prevent sticking, for 30-40 minutes, or until the polenta is thick and creamy.
  4. Remove from heat. Stir in the butter and Parmesan cheese (if using) until melted and well combined.
  5. Serve hot, garnished as desired.
