Ingredients:

  • 1 ripe avocado (about 200g)
  • 1/2 cup (120ml) Greek yogurt (or dairy-free alternative)
  • 1/4 cup (60ml) fresh lime juice (about 2 limes)
  • 1 cup (30g) fresh cilantro leaves, stems removed
  • 1-2 cloves garlic, minced (to taste)
  • 1/4 teaspoon (1g) cumin (optional)
  • Salt and pepper to taste
  • Water, as needed for consistency

Instructions:

  1. Cut avocado in half, remove the pit, and scoop the flesh into the blender.
  2. Juice the limes and mince the garlic.
  3. Add the avocado flesh, Greek yogurt, lime juice, cilantro, garlic, and cumin (if using) to the blender.
  4. Start blending on low, gradually increasing the speed until the mixture is smooth.
  5. If the dressing is too thick, add water, one tablespoon at a time, until desired consistency is reached.
  6. Taste and season with salt and pepper as needed.
  7. Transfer to a serving bowl or jar. Enjoy immediately or refrigerate for up to 3 days.
