Ingredients:
- 1 ripe avocado (about 200g)
- 1/2 cup (120ml) Greek yogurt (or dairy-free alternative)
- 1/4 cup (60ml) fresh lime juice (about 2 limes)
- 1 cup (30g) fresh cilantro leaves, stems removed
- 1-2 cloves garlic, minced (to taste)
- 1/4 teaspoon (1g) cumin (optional)
- Salt and pepper to taste
- Water, as needed for consistency
Instructions:
- Cut avocado in half, remove the pit, and scoop the flesh into the blender.
- Juice the limes and mince the garlic.
- Add the avocado flesh, Greek yogurt, lime juice, cilantro, garlic, and cumin (if using) to the blender.
- Start blending on low, gradually increasing the speed until the mixture is smooth.
- If the dressing is too thick, add water, one tablespoon at a time, until desired consistency is reached.
- Taste and season with salt and pepper as needed.
- Transfer to a serving bowl or jar. Enjoy immediately or refrigerate for up to 3 days.
