Ingredients:

  • 2 cups (250g) All-Purpose Flour, plus more for dusting
  • 1 teaspoon (5g) Baking Soda
  • 1/2 teaspoon (2g) Baking Powder
  • 1/2 teaspoon (3g) Salt
  • 3/4 cup (150g) Granulated Sugar
  • 1 large (approx. 50g) Egg, lightly beaten
  • 1 cup (240ml) Orange Juice, freshly squeezed preferred
  • 2 tablespoons (30ml) Vegetable Oil
  • 1 teaspoon (5ml) Vanilla Extract
  • 1 tablespoon Orange Zest, finely grated
  • 1 cup (100g) Dried Cranberries
  • 1 cup (100g) Chopped Walnuts (or pecans)

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  2. In a large bowl, whisk together flour, baking soda, baking powder, salt, and sugar.
  3. In a separate bowl, combine egg, orange juice, vegetable oil, vanilla extract, and orange zest.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  5. Gently fold in the dried cranberries and chopped walnuts (or pecans) until evenly distributed.
  6. Pour the batter into the prepared loaf pan, spreading evenly.
  7. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
