Ingredients:
- 2 cups (250g) All-Purpose Flour, plus more for dusting
- 1 teaspoon (5g) Baking Soda
- 1/2 teaspoon (2g) Baking Powder
- 1/2 teaspoon (3g) Salt
- 3/4 cup (150g) Granulated Sugar
- 1 large (approx. 50g) Egg, lightly beaten
- 1 cup (240ml) Orange Juice, freshly squeezed preferred
- 2 tablespoons (30ml) Vegetable Oil
- 1 teaspoon (5ml) Vanilla Extract
- 1 tablespoon Orange Zest, finely grated
- 1 cup (100g) Dried Cranberries
- 1 cup (100g) Chopped Walnuts (or pecans)
Instructions:
- Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
- In a large bowl, whisk together flour, baking soda, baking powder, salt, and sugar.
- In a separate bowl, combine egg, orange juice, vegetable oil, vanilla extract, and orange zest.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
- Gently fold in the dried cranberries and chopped walnuts (or pecans) until evenly distributed.
- Pour the batter into the prepared loaf pan, spreading evenly.
- Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
