Ingredients:
- 1 large French Baguette (11 oz), sliced into 24 rounds
- 2 tbsp extra virgin olive oil
- 1 clove garlic, halved
- 8 oz triple cream brie, chilled and sliced
- 1.5 cups fresh cranberries
- 3 tbsp maple syrup
- 1 tbsp orange zest
- 2 tbsp fresh orange juice
- 1 tsp fresh thyme, finely minced
Instructions:
- Preheat oven to 375°F (200°C). Arrange baguette slices on a rimmed baking sheet, brush with olive oil, and rub each slice with the cut garlic clove. Bake for 5 minutes until golden and firm.
- While bread toasts, combine cranberries, maple syrup, orange juice, and orange zest in a small saucepan over medium heat. Simmer for 5 to 7 minutes until berries pop and mixture thickens into a jam-like consistency. Stir in fresh herbs.
- Place a thin slice of brie onto each toasted baguette round. Top with a generous spoonful of the warm cranberry reduction. Return to the oven for 2 to 3 minutes until the brie is just beginning to melt.
