Ingredients:

  • 1 large French Baguette (11 oz), sliced into 24 rounds
  • 2 tbsp extra virgin olive oil
  • 1 clove garlic, halved
  • 8 oz triple cream brie, chilled and sliced
  • 1.5 cups fresh cranberries
  • 3 tbsp maple syrup
  • 1 tbsp orange zest
  • 2 tbsp fresh orange juice
  • 1 tsp fresh thyme, finely minced

Instructions:

  1. Preheat oven to 375°F (200°C). Arrange baguette slices on a rimmed baking sheet, brush with olive oil, and rub each slice with the cut garlic clove. Bake for 5 minutes until golden and firm.
  2. While bread toasts, combine cranberries, maple syrup, orange juice, and orange zest in a small saucepan over medium heat. Simmer for 5 to 7 minutes until berries pop and mixture thickens into a jam-like consistency. Stir in fresh herbs.
  3. Place a thin slice of brie onto each toasted baguette round. Top with a generous spoonful of the warm cranberry reduction. Return to the oven for 2 to 3 minutes until the brie is just beginning to melt.
