Ingredients:

  • 1 sheet (14.1 oz/400g) frozen puff pastry, thawed
  • 4 oz (115g) brie cheese, rind removed, cut into small cubes
  • 1/2 cup (120ml) whole berry cranberry sauce
  • 1 large egg, beaten
  • Optional: fresh thyme sprigs for garnish

Instructions:

  1. Gently unfold the thawed puff pastry on a lightly floured surface. If desired, lightly roll it out to slightly thin it.
  2. Use a pizza cutter or sharp knife to cut the puff pastry into 2-inch squares.
  3. Gently press each pastry square into the mini muffin tin cups, creating a small well.
  4. Place a few cubes of brie cheese into each pastry cup, followed by a spoonful of cranberry sauce.
  5. Brush the edges of the puff pastry with the beaten egg wash.
  6. Bake in a preheated oven at 375°F (190°C) for 15-20 minutes, or until the pastry is golden brown and the brie is melted and bubbly.
  7. Let the bites cool slightly in the muffin tin before transferring them to a serving platter. Garnish with fresh thyme sprigs (if using).
