Ingredients:

  • 6 medium Apples (approx. 1 kg) – mixed sweet and tart, peeled, cored, and sliced 1/4 inch thick
  • 1 cup (120 g) Fresh or Frozen Cranberries
  • 1/4 cup (50 g) Granulated Sugar (for filling)
  • 2 Tbsp (16 g) All-Purpose Flour or Cornstarch
  • 1 Tbsp (15 ml) Fresh Lemon Juice
  • 1 tsp (5 g) Ground Cinnamon (for filling)
  • Pinch of Ground Nutmeg
  • 1 cup (125 g) All-Purpose Flour (for topping)
  • 1 cup (90 g) Old-Fashioned Rolled Oats
  • 1/2 cup (110 g) Packed Light Brown Sugar
  • 1/4 cup (50 g) Granulated Sugar (for topping)
  • 1/2 tsp (3 g) Kosher Salt
  • 1/2 tsp (2 g) Ground Cinnamon (for topping)
  • 1 stick (1/2 cup / 113 g) Unsalted Butter, cut into 1/2-inch cubes and chilled
  • 1/2 cup (60 g) Chopped Pecans or Walnuts (optional)

Instructions:

  1. Prep and Preheat: Preheat the oven to 375°F (190°C / Gas Mark 5). Lightly grease a 9x13 inch (23x33 cm) standard baking dish.
  2. Prepare the Topping: In a large bowl, whisk together 1 cup flour, oats, brown sugar, 1/4 cup granulated sugar, salt, 1/2 tsp cinnamon, and nuts (if using). Add the chilled, cubed butter. Work the butter into the dry ingredients using a pastry blender or fingertips until the mixture resembles coarse sand or pea-sized crumbs. Crucially, do not overwork it. Place the topping in the refrigerator to chill.
  3. Prepare the Fruit Filling: In a second large bowl, combine the sliced apples and cranberries. Add the 1/4 cup granulated sugar, 2 Tbsp flour (or cornstarch), lemon juice, 1 tsp cinnamon, and nutmeg. Gently toss until the fruit is evenly coated. Pour the fruit mixture into the prepared baking dish.
  4. Assembly and Bake: Retrieve the chilled topping and evenly distribute it over the fruit mixture. Press lightly so it adheres slightly. Bake for 40–45 minutes, or until the topping is deep golden brown and the fruit filling around the edges is visibly bubbling fiercely.
  5. Rest and Serve: Remove the crisp from the oven and let it stand on a wire rack for at least 15 minutes. This rest time is essential to allow the fruit juices to thicken fully. Serve warm.
