Ingredients:
- 1.5 lbs (680g) boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 tbsp (15ml) olive oil
- 1/2 tsp (2.5ml) salt
- 1/4 tsp (1.25ml) black pepper
- 1/2 tsp (2.5ml) garlic powder
- 1/4 tsp (1.25ml) onion powder
- 1 tbsp (15ml) unsalted butter
- 1 small yellow onion, finely chopped
- 2 cloves garlic, minced
- 10 oz (283g) frozen spinach, thawed and squeezed dry
- 1 cup (240ml) chicken broth
- 1 cup (240ml) heavy cream
- 1/4 cup (25g) grated Parmesan cheese, plus more for topping
- 1/4 tsp (1.25ml) nutmeg
- Salt and pepper to taste
- 1/4 cup (25g) shredded mozzarella cheese (optional)
Instructions:
- In a bowl, toss the chicken cubes with olive oil, salt, pepper, garlic powder, and onion powder. Ensure chicken is evenly coated.
- Heat skillet over medium-high heat. Add chicken in a single layer and cook until lightly browned on all sides and almost cooked through. Remove chicken from skillet and set aside.
- Melt butter in the same skillet. Add chopped onion and cook until softened, about 5 minutes. Add minced garlic and cook until fragrant, about 1 minute.
- Stir in the squeezed-dry spinach into the skillet with the onion and garlic. Cook for 2 minutes, stirring frequently.
- Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
- Stir in the heavy cream, Parmesan cheese, and nutmeg. Season with salt and pepper to taste. Simmer for 5 minutes, or until the sauce has thickened slightly.
- Return the sautéed chicken to the skillet and nestle it into the sauce. If using mozzarella cheese, sprinkle it over the top.
- Bake Method: Place the skillet in a preheated oven at 375°F (190°C) for 10-15 minutes, or until the cheese is melted and bubbly and the chicken is cooked through (internal temperature reaches 165°F/74°C).
- Simmer Method (Alternative): Cover the skillet and simmer on low heat for 10-15 minutes, or until the chicken is cooked through and the sauce is heated through.
- Garnish with additional Parmesan cheese, if desired. Serve immediately.
