Ingredients:

  • 1/4 cup (60 ml) Red Wine Vinegar
  • 3/4 cup (180 ml) Extra Virgin Olive Oil
  • 1 tablespoon (15 ml) Dijon Mustard
  • 1 clove Garlic, minced
  • 1 teaspoon (5 ml) Honey or Maple Syrup (optional)
  • Salt and freshly ground Black Pepper to taste

Instructions:

  1. In a mixing bowl, whisk together the red wine vinegar, Dijon mustard, minced garlic, and honey (if using).
  2. Slowly drizzle in the olive oil while whisking constantly until the mixture is emulsified (thickened and creamy).
  3. Season with salt and pepper to taste. Taste and adjust!
  4. Transfer the vinaigrette to a jar or airtight container. Store in the refrigerator. Let it sit for at least 30 minutes before using.
