Ingredients:
- 1/4 cup (60 ml) Red Wine Vinegar
- 3/4 cup (180 ml) Extra Virgin Olive Oil
- 1 tablespoon (15 ml) Dijon Mustard
- 1 clove Garlic, minced
- 1 teaspoon (5 ml) Honey or Maple Syrup (optional)
- Salt and freshly ground Black Pepper to taste
Instructions:
- In a mixing bowl, whisk together the red wine vinegar, Dijon mustard, minced garlic, and honey (if using).
- Slowly drizzle in the olive oil while whisking constantly until the mixture is emulsified (thickened and creamy).
- Season with salt and pepper to taste. Taste and adjust!
- Transfer the vinaigrette to a jar or airtight container. Store in the refrigerator. Let it sit for at least 30 minutes before using.
